Kale is a leafy green vegetable similar to cabbage or collard greens. It’s been around for centuries—especially in Europe—where it has been a staple for generations. Actually, during WWII, people were encourage to grow kale in their home gardens and include it as a part of their regular diet to help offset the potential health hazards that were the result of rationing. Now that is super food.
Kale is produced from June until March and is most plentiful from October on. It is one of those rare vegetables that actually flourishes in more harsh climates and is sweeter and more flavorful after being exposed to frost. Kale is packed with vitamins C, A and K and contains high amounts of calcium, potassium, folic acid and lutein. All of that means that it lowers cholesterol, serves as an anti-inflammatory, and is even known to have cancer-fighting properties.
