New Product: Purple Sweet Potato

Most people are familiar with the traditional, low moisture orange sweet potato, which Silva has produced for years. But what about its flavorful, lavender cousin—the purple sweet potato? As we continue to enhance our product line for customers we are pleased to introduce this colorful alternative.

You can use the purple sweet potato in many of the same ways you’d use a regular orange or white potato, but the striking hue adds a colorful twist to mashed potatoes, home fries, and soups (imagine a gorgeous lavender bisque). In perusing the internet you might also find recipes for purple sweet potato ice cream, doughnuts, and sweet potato roll cake. Its color is completely natural as it comes from the same pigment that makes cherries and strawberries red.

Purple sweet potatoes contain antioxidants that help to prevent diseases, such as cardiovascular disease and cancer. They boost immunity, are anti-inflammatory, and keep bones and skin healthy. Purple sweet potatoes are also diabetic friendly. Like other purple foods, purple sweet potatoes rank high in nutritional value. They are a good source of dietary fiber, calcium, iron, complex carbohydrates, and low in fat and sodium.

The purple sweet potato is harvested in late fall to winter. We will be able to offer this item in dices, granules, and powder through our Illinois production facility.
